Chef Vusi Ndlovu’s unique take on African cuisine with 
a fine-dining touch has guests and food critics raving over his talents in the kitchen where he elevates underutilised local ingredients, recipes and techniques (both modern and traditional) that have been passed down over generations to celebrate Africa in his cooking.

He won the coveted San  Pellegrino Best Young Chef in Africa and 7th Best in the World-award in 2018 and lately he's been serving up the most delectable dishes in pop-up kitchens all over South Africa, combining some of the most unconventional flavours with a distinctly African aesthetic, usually prepared over an open fire.

He invited us into his pop-up kitchen at the beautiful Pasarene Wine Farm outside Franschhoek for a first-hand experience of his charm, talent and drive on #TheSecretSauce, Wednesday (15 June) at 18:30, exclusive to @SABC3.

I actually don't even know where to start. Vusi is a culinary genius and a prodigy!  Let me start there. But let me first say I arrived with a bias because I have tasted Vusi's food before so I am a fan. But I've only eaten his food once and he did something with chicken that I didn't believe was possible. So tonight my expectations were high. He delivered higher! Let me start by saying...This was FOOD...food like you wish you could cook but can't! It was lick your plate and ask for a piece of bread to lap the gravy kind of food. But none you've ever tasted before. 

Vusi has put flavors together on a plate that you will not get on a gourmet plate in SA. It’s African, tastes delicately deconstructed and reconstructed onto your plate in a way you have never experienced. He served meats fish and seafood you know and meats, you don't get at restaurants, like chicken thighs and pork neck.  And everything, I mean everything is cooked on an open fire! And all beautifully paired with Paserene wines. What a wow!
